Great for feeding a crowd as well as inexpensive! Roasted Belly of Pork 1 large Piece of Belly Pork (Scored) Chop garlic and herbs finely and spread on the inside of the meat, add salt & pepper Roll & Tie with string Rub Olive Oil into the scored skin Rub Salt & Pepper into the skin Roast on a rack in a high oven for approx 2 hours until skin nice & crispy. Serve in slices, this is just as nice cold, crispy on the outside, juicy on the inside!
Roasted Veggie Couscous Dice up your favourite veggies, I use Meanwhile make your couscous 1tsp ground cumin Heat these in the pan for a couple of minutes with a little olive oil, then add 12 fl oz of veg stock and bring to the boil, finally add 8 oz couscous stir in, take off the heat and put a lid on and leave for 10 minutes. Mix in your roasted veggies and serve hot or cold, easy!!
