    Super Salmon Supper

    Here is yet another stolen recipe from my Swedish friend, who always manages to come up with the simplest of ideas and turn them into something stunning which in turn then becomes one of our family favourite suppers.

    As you all know, simple ideas always work well with me and the ability to only have to have very few ingredients to hand makes for a speedy mid week meal.

    I serve this with a taglietelle with cherry tomatoes, broad beans and carrot strips running through it which all help towards the five a day.

    Salmon with Crème Fraiche

    4 Salmon Fillets
    1 Tub of Crème Fraiche
    1 pack of Feta Cheese
    Handful of Chives
    2 tsp lemon juice
    Salt & Pepper

    Crumble the feta cheese into a bowl and empty the tub of crème fraiche and mix them both well together, adding the lemon juice, salt & Pepper and the chopped chives for colour.

    Place your salmon fillets into an ovenproof bowl and pour the mixture over the top, ensuring the fillets are completely covered.

    Place into a warm oven at 175C for approximately 30 minutes.

    Serve with any type of pasta, like I said I like a taglietelle with some steamed vegetables mixed through for a colourful side dish.
