Marinated Welsh Goats Cheese Bruschetta

Here is my award winning recipe for a lovely canapé or starter, or perhaps an accompaniment at a Barbecue. This was judged to be the best Welsh Recipe by Bryn Williams last year and has been loved by everyone who has ever tasted it.

Marinated Welsh Goats Cheese Bruschetta
200g Welsh Goats Cheese
1dl (decilitre)Vegetable Oil
1 tbsp white wine vinegar
1 tbsp honey
½ dl flaked almonds
100 ml parsley
Salt & Pepper to season

Crumble goats cheese into mixing bowl add all other ingredients and mix well together, cover and refrigerate, best if done 24 hours in advance. Take out of fridge and return to room temperature before serving. Serve in spoonfuls atop char-grilled bruschetta brushed with olive oil and crushed garlic.
