Roasted Belly of Pork

Make a change by serving this aromatic & crispy pork with tasty roasted veggie couscous, instead of your normal roast dinner. Great for feeding a crowd as well as inexpensive!

Roasted Belly of Pork

1 large Piece of Belly Pork (Scored)
2-3 cloves of Garlic
Large bunch of mixed herbs, Rosemary, Sage & Thyme or any of your favourites
Salt & Pepper

Chop garlic and herbs finely and spread on the inside of the meat, add salt & pepper

Roll & Tie with string

Rub Olive Oil into the scored skin

Rub Salt & Pepper into the skin

Roast on a rack in a high oven for approx 2 hours until skin nice & crispy.

Serve in slices, this is just as nice cold, crispy on the outside, juicy on the inside!

Roasted Veggie Couscous

Dice up your favourite veggies, I use
Red & Yellow Peppers
Butternut Squash
Red Onions
Drizzle with olive oil & salt & pepper and place them in a roasting tray for approx 30 mins

Meanwhile make your couscous

1tsp ground cumin
1tsp ground coriander
1 tsp paprika
1 clove garlic

Heat these in the pan for a couple of minutes with a little olive oil, then add 12 fl oz of veg stock and bring to the boil, finally add 8 oz couscous stir in, take off the heat and put a lid on and leave for 10 minutes.

Mix in your roasted veggies and serve hot or cold, easy!!
You can add roasted pine nuts, sunflower seeds to this dish as well for extra crunch.
