  • Chicken & Leek Pie

    Pastry & Pies

    Making your own pastry can be extremely satisfying and is just about one of the simplest things to do, also it is from store cupboard ingredients and super cheap, which is always a plus! Here is a basic recipe for it that makes the basis for all your winter warming pie concoctions.

    350g Plain Flour
    75g butter room temperature
    75g lard
    2 egg yolks
    1 tsp salt.
    The thing to remember is to handle it as little as possible, again making life easier it can all be done in your food processor or mixer.

    I place in the flour, salt , butter and lard first and mix until it resembles breadcrumbs and then add the egg yolks, if it seems a little dry just add a few drops of water to bring it together into dough form,

    Then wrap in clingfilm and place to rest in the fridge for at least 20minutes.

    Chicken & Leek Pie

    500g Chicken breast or thighs chopped into bitesize chunks
    1 onion chopped
    1 leek chopped
    40g plain flour
    150ml milk
    100ml cream
    Salt & Pepper to season

    Now for one of our favourite pies, Chicken & Leek. The ingredients for this can be alternated with any of your favourite veggies or meats, just literally replace them for the Chicken and the leeks in this recipe. In fact I have been desperate to try out Rabbit Pie with our family and shall be doing exactly that, as its a great alternative meat that seems to have grown out of fashion, also once again excellent value for money.

    Fry off your chicken in a large saucepan with the onions, add the leeks and saute them further, making sure you add plenty of seasoning. Then add the flour and cook for a couple of minutes until adding the milk, which should then become a thickish sauce. Finally add the cream and then leave to cool.

    Start rolling out your pastry and line your pie tin, then spoon in the mixture and cover with your pastry topping, I can never resist cutting out pictures or words with my cookie cutters to transform the pie into something for the kids to smile at!

    Place in your oven at 180C for approximately 20-30minutes until the pastry is golden brown.
